8 is the maximum for DVD-Lab. I don't know if there is a trick or workaround for getting more.

According to the DVD FAQ, the DVD specs allow up to 32 subtitle tracks.

Depending on the length of the film or clip, you may be able to duplicate the footage and add another 8 subs to the copy.....

The DVD-lab can only add 8 subtitles, I already request that to MMB but it's unlikely you will be able to add more in future because this has to do with the demux engine that DVD-lab uses.

You can however add more subtitles using some freewares but since you do it outside dvd-lab you wont be able create menu links to them.
